Counterfeiting of honey products is a global problem. The reason for counterfeiting is economic. Honey is mixed with cheaper substitutes. In response to global food safety concerns, we have developed an innovative methodology for detecting counterfeiting of honey. The methodology is based on Raman scattering spectrometry and neural networks. Based on this methodology, a system for determining the quality and composition of food honey has been developed, combining Raman scattering spectrometry methods and artificial intelligence (artificial convulsive neural networks).
